This place is a total disappointment. The pictures on their website don't match what shows up at your door, and the meat is dried out and costs way too much. The service is awful and they treat customers badly. Do yourself a favor and look elsewhere.

UPDATE: After discussing this with Gabriel, I found that the website has since been corrected. The cart is now showing more reliable timeframes. I had good communication with him about the discrepancies between what their call center was saying and what their website was displaying, and it looks like they've fixed those issues now.

The size is impressive with beautiful marbling throughout, exactly what you want from a quality butcher shop. You can see the care that went into handling this cut. The bone is trimmed perfectly, the meat has that rich aged appearance, and the fat distribution looks ideal for taste. This is going to be incredible once it hits the heat. Before I even cook it, I'm giving five stars for the way it was packaged, the quality of the product, and how carefully it was prepared.
